不得不說海鱺真的是我個人回購率很高的魚種。
進入秋冬之際正是野生海魚開始肥美的時候也是最適合吃生魚片的季節!每次看到夠肥的
野生海鱺都會忍不住買回家做生魚片吃。

野生海鱺的香氣大概是養殖的兩三倍,常吃的人再回頭吃養殖的會覺的味道無趣了點,雖
然台灣箱網養殖的品質也很棒但價格也不是很便宜有些號稱高CP值俗又大碗的生魚片就用
中国或越南的(箱子)魚價格只要台灣的一半,反正哇沙米醬油喇喇欸沾一沾飼料味腥臭
味也吃不出來。
海鱺是一種活動量很大的魚,剛殺好的魚太新鮮野生魚的話咬起來會比較韌我個人都是習
慣一條魚分2次吃,第一次先放個3~4天!這時候只要沾一點點醬油就好吃起來口感爽脆
不硬又清甜海鱺香氣撲鼻非常舒服可以吃一大盤也不覺得膩
熟成3~4天顏色鮮紅

放個七八天再吃另外一半,此時魚肉水分減少很多肉質就會比較軟白色油脂豐富的話入口
嚼個幾脂香濃郁整個生魚片的甜味都出來了忍不住又整盤吃光
熟成7~8天顏色比較粉紅色
