為啥用午仔魚 因為便宜,300g左右才一百塊 便宜肉魚
居酒屋午仔魚一夜干好像賣250元 聽說味道好就做看看
魚都有請市場老闆先開背取內臟了 (懶得處理)

製作:
1. 洗掉魚身上血塊
2. 10%鹽水 10分鐘 浸泡

3. 8%鹽水 1小時 (另外加入昆布+少許米酒)
